Aromatic Chemistry & Pan Mechanics

LAYER FLAVOUR AT THE PAN

Supermarket taco seasoning packets rely on cornstarch fillers, anti-caking silicon dioxide and excessive sodium. When you toast whole seeds, match dried chillies to your filling, and time your acid deglaze, every layer tastes clear and distinct.

BUILD YOUR NEXT TACO

UNDERSTAND YOUR DRIED CHILLI SPECTRUM

Combine at least two dried chillies—one for fruity base notes and one for smoke or tannic structure.

Sweet & Raisin-Like

Ancho (Dried Poblano)

Scoville: 1,000–2,000 SHU. Plump, wrinkled dark red skin with notes of prune, fig and mild coffee. Use as the primary volume builder (50% of your chilli blend) for steak, black beans and roasted squash.

Bright Berry & Tang

Guajillo (Dried Mirasol)

Scoville: 2,500–5,000 SHU. Smooth leathery crimson pod delivering cranberry-tea brightness and clean mid-palate heat. Essential for al pastor marinades, walnut chorizo and red adobo sauces.

Woodsmoke & Cocoa

Chipotle Morita & Pasilla

Scoville: 2,500–8,000 SHU. Morita brings punchy fruitwood smoke; long dark Pasilla ("little raisin") adds savoury cocoa-herb earthiness ideal for mushrooms and braised greens.

THREE CUSTOM WORKBENCH RUB RATIOS

Each formula yields 60 g (enough for 1.2 kg of protein or vegetable fillings). Store in airtight amber jars away from stove steam.

THE 4-STAGE PAN TIMELINE

Follow this exact chronological order at the stove so spices never burn and fillings stay crisp.

Clock Window Pan Action Thermal Target Why It Works
Minute 0:00–7:00 Sear filling in oil with salt only 220°C High Heat Allows surface moisture to evaporate and Maillard browning to happen before sugars or spices can scorch.
Minute 7:00–7:30 Clear centre ring; add oil + spice blend 175°C Medium Heat Lipid-soluble flavour compounds in cumin and chillies dissolve instantly into hot fat.
Minute 7:30–8:00 Add grated garlic & toss through filling 165°C Medium Heat Raw garlic mellows in 30 seconds without turning acrid.
Minute 8:00–8:30 Splash 15 ml citrus juice or vinegar; scrape pan Rapid Steam Reduction Acid dissolves caramelized pan fond and locks spices onto the surface of your filling.
