BALANCE HEAT WITH BRIGHTNESS
Capsaicin is a chemical irritant, not a flavour by itself. A salsa only sings when heat is anchored by charred sugars, volatile herbs, fat-soluble aromatics and calibrated citrus or vinegar acidity that keeps watery liquid off your tortilla.
BUILD YOUR NEXT TACO1. BLISTERED TOMATILLO, PISTACHIO & TARRAGON VERDE
Why it belongs: Tomatillos bring natural pectin and sharp malic acid, while toasted pistachios thicken the salsa without dairy so it clings to roasted vegetables or steak.
Ingredients
- 450 g husked, rinsed tomatillos (or substitute 350 g courgette + 2 tbsp lime juice)
- 2 serrano chillies, stems removed (keep seeds for sharper heat)
- 1/2 medium white onion, cut into thick wedges
- 3 cloves unpeeled garlic
- 45 g shelled unsalted pistachios, toasted 4 minutes in a dry pan
- 15 g fresh coriander leaves and tender stems + 8 g fresh tarragon leaves
- 15 ml fresh lime juice and 1 tsp flaky sea salt
Method & Texture Control
- Dry Char: Arrange tomatillos, serranos, onion wedges and unpeeled garlic on a dry cast-iron comal or under a high grill. Blister for 10–12 minutes until black spots cover 40% of the skins and the tomatillos slump into olive-green softness.
- Nut Base First: Peel the softened garlic. Pulse toasted pistachios, garlic and salt in a blender or mortar first until a coarse paste forms.
- Short Pulse Integration: Add charred tomatillos (with any pan juices), chillies, onion, coriander, tarragon and lime juice. Pulse five times for 2 seconds each so the salsa remains spoonable rather than aerated foam.
2. PEPITA, CRANBERRY & MORITA SALSA MACHA
Why it belongs: Originating from Veracruz oil-based chilli condiments, this modern workbench version pairs smoky morita chillies and crunchy pumpkin seeds with tart dried fruit to wake up rich mushroom or bean tacos.
Ingredients
- 180 ml neutral sunflower or light olive oil
- 4 dried morita chillies (smoked red jalapeños), stemmed and seeded
- 4 dried guajillo chillies, stemmed, seeded and snipped into strips
- 50 g raw green pumpkin seeds (pepitas)
- 2 tbsp white sesame seeds
- 5 cloves garlic, sliced into thin 2 mm coins
- 35 g dried unsweetened or lightly sweetened cranberries, finely chopped
- 10 ml apple cider vinegar + 1 tsp flaky salt
Temperature Discipline
- Crisp Aromatics First: Warm the oil with garlic coins and pepitas in a small saucepan over medium-low heat for 4 minutes until garlic turns pale gold and pepitas pop. Add sesame seeds for the final 30 seconds, then scoop solids into a heatproof bowl with a slotted spoon.
- 15-Second Chilli Flash: Take the pan off the burner. Drop in the snipped morita and guajillo strips and swirl for 15 seconds—residual heat puffs the chillies without turning them acrid.
- Pulse & Fold: Cool 10 minutes. Coarsely pulse half the chillies and garlic in the oil, then fold back the whole crispy pepitas, chopped cranberries, vinegar and salt.
3. CHARRED HABANERO, ROASTED CARROT & MANGO EMULSION
Why it belongs: Habaneros have floral apricot aromatics that get lost if used raw in tiny quantities. Roasting sweet carrots alongside the chilli buffers the Scoville spike and creates a silky squeeze-bottle sauce.
Simmer 200 g peeled sliced carrots with 4 cloves garlic in lightly salted water until fork-tender (about 12 minutes), reserving 60 ml cooking liquid. Meanwhile, blister 2 whole orange habanero chillies and 1/2 white onion in a dry pan until blackened in spots. Blend the warm carrots, cooking liquid, stemmed habaneros, onion, 120 g diced ripe mango, 45 ml fresh lime juice, 15 ml cider vinegar and 1 tsp salt on high speed for 60 seconds until glossy. Strain if desired and chill before dotting onto seared halloumi or steak tacos.
